Serves: 2

Ingredients
2 x 175g (6oz) salmon fillets
55g (2oz) butter
1 tbsp chopped fresh herbs, eg chives, tarragon and parsley
New potatoes and lemon wedges to serve
Method
1. Season the salmon fillets with salt and ground black pepper. Heat 25g (1oz) of the butter in a non-stick frying pan until bubbling and add the salmon fillets. Fry over a medium heat for 5 minutes then turn over and continue to cook for 3-4 minutes until the salmon feels firm to the touch. Remove the salmon and keep warm.
2. Add the remaining butter to the pan along with the herbs, fry until bubbling then pour over the salmon. Serve with new potatoes and a wedge of lemon.
