Bruschetta topped with butter, crushed garlic, roasted peppers and tomatoes

Cooking time: 10 minutes
Serves: 4-6

Ingredients
1 french stick. Cut into 2.5cm (1”) slices
1 125g block butter with crushed garlic, softened
1 roasted red pepper, sliced
1 roasted yellow pepper, sliced
100g (4oz) sunblush tomatoes

75g (3oz) black olives
Method
1. Preheat oven to gas 6 /200C/400F.
2. Spread the butter with crushed Garlic onto the french bread slices and bake in the oven for 5 minutes, top with the peppers, tomatoes and olives and return to the oven for a further 2-3 minutes to warm the topping through.
