Bruschetta topped with butter, crushed garlic, roasted peppers and tomatoes

Buttered Bread Cases with blue cheese, brie and chargrilled peppers

Avocado , Butter, Yoghurt and Dill Mousse

Preparation time: 10 minutes

Serves: 2-3

Ingredients
12 slices brown or white medium sliced bread
75g (3oz) butter, softened
Toppings as desired - blue cheese, brie, feta cheese, chargrilled peppers, grapes, crispy bacon pieces.
Method
1. Preheat oven to gas 5/190C/375F.
2. Butter the bread lightly on both sides and cut off the crusts to form a square. Press the bread into patty/bun tins and cook for 10 minutes until golden and crisp.
3. Leave to cool and fill with brie and grapes or sunblush tomatoes, blue cheese and crumbled crispy bacon or roasted peppers or feta.
